Detox Pesto

Herbs are some of the best culinary healing tools we have. Not only will they add flavor to your meals, but they're powerful healers when it comes to infections in our bodies. The list is long and I try to work as many in, as I can, during the week. One easy way to do this is to batch several different sauces that incorporate these herbs to keep on hand, either in the fridge or freezer for easy, quick meal prep. Cilantro Parsley Pesto is almost always in my fridge to use on grilled meats like fish, shrimp, and chicken or as a condiment on taco night. I like to call it “Detox Pesto” because its ingredients work hard for your immune system. The key players in my Detox Pesto are cilantro, garlic, parsley, and oregano. Cilantro is a powerful chelator of heavy metals like mercury and lead. Yeast, viruses, molds, and parasites that live in our systems feed off of these metals and can cause an overgrowth of them that can have substantial effects on our hormones, immune systems, and our gut health. Garlic is antiviral and antibacterial and can protect against viruses. Parsley, like cilantro, is a potent chelator as well - specifically to copper and aluminum. Oregano is anti-fungal and is an essential player in boosting immunity and fighting yeast overgrowth. This pesto freezes well, so make extra. Use an ice-cube tray to freeze into individual portions for a quick meal later on.
