Golden Frittata

 

I love working “good for you ingredients” into something so simple and easy. The star ingredient here that gives this golden frittata its golden color and its magic power is from turmeric

Unless you’ve been hiding under a rock, you know the power of turmeric. It is a powerful anti-inflammatory because of the polyphenols it contains. It works by both nourishing and moving the blood, which then speeds up healing.

There was a study done in the Journal of Oncogene that found that turmeric was more powerful than both aspirin and ibuprofen!

It can help with depression and has a powerful effects on Alzheimers, diabetes, and arthritis.

Always couple turmeric with a small pinch of pepper. This allows turmeric to work better by opening up the pathways and allowing turmeric to work.

I used mushrooms and fennel as veggies to add in, but you could use anything you like, or none, and keep it simple.

As always, know that eggs are an excellent source of all your big vitamins like; A, D, E and K- these are the backbone of your immune system and hormones.

Choline - a key mineral in pregnancy. Iodine and selenium, which are super important to the thyroid, and is very liver protective. No doubt, eggs are a great way to nourish your morning!

Ingredients

Instructions

  1. Preheat the oven to 350*
  2. Heat 1/2 tbs ghee or cooking fat in a skillet on high till melted then add the mushrooms and saute until limp
  3. Place to the side, then add 1/2 tbs more of ghee or fat of choice. Then add the diced fennel and saute till limp
  4. Add the mushrooms to the fennel, in the same skillet, and place to the side
  5. In a large mixing bowl, add 12 eggs, 1.5 tsp turmeric, salt and pepper. Mix till all combined
  6. Add the egg mixture to the fennel and mushrooms
  7. Place the skillet into the preheated oven and bake for 35-40 mins, or until the mixture is set in the middle
  8. Serve with fruit, on it's own or a side of cooked veggies
  9. I like to cut these into individual serving sizes and wrap in parchment. Then you have a great and healthy breakfast to go in the morning
